01. Top 10 Must-Eats

1. Sushi

From conveyor belt (Kaiten) to high-end Omakase. Try fatty tuna (Otoro).

2. Ramen

Tonkotsu (pork bone) in Fukuoka, Miso in Sapporo, Shoyu in Tokyo.

3. Wagyu Beef

Kobe beef is famous, but Matsusaka and Omi beef are just as good.

4. Okonomiyaki

Savory pancake. Hiroshima style (layered) vs Osaka style (mixed).

02. Table Manners

Itadakimasu!

Say this before you eat. It means "I humbly receive".

  • Slurping is Good: When eating noodles, slurping shows you enjoy it and cools the noodles.
  • No Tipping: Service is included. Leaving money is confusing.
  • Oshibori: Use the wet towel to wipe your hands, not your face.

03. Restaurant Types

  • Izakaya

    Japanese pub. Small plates (Yakitori, Edamame) and lots of beer/sake.

  • Yakiniku

    Grilled meat. You cook raw meat at your table.

  • Depachika

    Department store basements. High-end food halls with amazing bento.

04. How to Order

Many restaurants have ticket machines (Shokken) at the entrance.

  1. Put money in the machine.
  2. Press the button for the food you want.
  3. Take the ticket and give it to the staff.
  4. Sit down and wait for your food.

05. Vegetarian Tips

Japan can be hard for vegetarians as Dashi (fish stock) is in everything.
